Ingredients

  • Millet: 1 cup (any variety such as pearl millet, finger millet, or foxtail millet)
  • Curd (Yogurt): 1 cup
  • Water: 2 cups (for cooking millet)
  • Salt: to taste
  • Mustard Seeds: 1 teaspoon
  • Cumin Seeds: 1 teaspoon
  • Green Chilies: 2, finely chopped
  • Ginger: 1 inch, grated
  • Curry Leaves: 8-10 leaves
  • Chopped Coriander Leaves: 2 tablespoons
  • Chopped Cilantro (Coriander Leaves): for garnish
  • Oil: 1 tablespoon
  • Optional: 1/4 cup grated carrots, 1/4 cup chopped cucumber

Method

  1. Cook the Millet:
    • Rinse the millet thoroughly under running water.
    • In a saucepan, add the rinsed millet and 2 cups of water.
    • Bring to a boil, then reduce the heat to low and cover the pan.
    • Cook for about 15-20 minutes, or until the millet is tender and water is absorbed.
    • Remove from heat and let it cool slightly.
  2. Prepare the Tempering:
    • Heat oil in a pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add cumin seeds, chopped green chilies, and grated ginger. Sauté for a minute.
    • Add curry leaves and sauté for another 30 seconds.
  3. Combine Ingredients:
    • In a large bowl, mix the cooked millet with curd.
    • Add the prepared tempering to the millet and curd mixture.
    • Mix well. If desired, add grated carrots and chopped cucumber for extra crunch and nutrition.
    • Season with salt to taste.
  4. Garnish and Serve:
    • Garnish with chopped cilantro.
    • Serve the millet curd rice warm or chilled.

  • You can adjust the consistency of the curd rice by adding more or less curd, depending on your preference.
